First, envisioned by One Off Hospitality partners Paul Kahan, Donnie Madia, Eduard Seitan and Terry Alexander, as well as the culinary teams at the Publican family of restaurants, Publican Quality Bread specializes in whole-grain, long-fermented baked goods with a store front bakery and café location in West Town and a second location in Oak Park. Managing Partner Greg Wade, winner of the 2019 James Beard Award for “Outstanding Baker,” oversees the brand, as well as Publican Quality Bread’s robust wholesale division, which supports over 120 restaurants and markets across Chicagoland.
In addition to a daily bakery lineup for dine-in and to-go orders, Publican Quality Bread also offers catering options ranging from coffee and pastries to the iconic Big Sandwich to Roman-style pizza for corporate and social functions.
